Justin Trodahl – Owner, Founder, and Leader of the Assisted Living Management Team
Tiffin House Owner, Justin Trodahl, founded his first Tiffin House in Georgetown, Texas in 2008. He worked as a Director of Rehabilitation in several Nursing homes across the State of Texas between 1997-2005 and felt in his heart the Alzheimer’s and dementia residents in these settings were under-served. Inspired by the highly successful model his Mother had developed in Centralia Washington, Justin decided to expand the Tiffin House to Texas. He had over a decade of experience working with the elderly in his mother’s Tiffin Houses and used those ideas, coupled with his own unique experiences, to come up with the Quality of Life Program that Tiffin House uses to improve the residents’ lives. The Home setting of Tiffin House is like no other and this is evident from reading the testimonials of residents’ families. The Tiffin House difference is simply unmatched.
Justin encourages his staff members to allow residents to help with chores and it is common to see them helping fold clothes, sweeping the kitchen and doing dishes. Justin wants to add value to each resident’s life. Justin provides training for his staff on caring for Alzheimer’s and Dementia residents. He also provides the same training free of charge to families interested in learning more about the disease process. Justin is a Combat Veteran of the Iraqi War (2006-2007), where he flew AH-64 Apache helicopters during the ‘Surge’ in support of US ground forces. He began his service to our country in 1992 and Honorably retired in 2016.
Justin received his Occupational Therapy degree from the US Army Health Science Center in 1994. He then graduated from Texas A&M University in 1999 with a Bachelors degree in Psychology with a heavy emphasis on Biology and Anatomy and Physiology. In 2003 Justin received his Masters in Business from the University of Oklahoma. In 2004 Justin was working on his Masters in Occupational Therapy at TWU when called to duty with the US Army.
Uyen Beach, BSN, RN – Director of Nursing
A Dean’s List graduate from the University of Washington, Uyen has been a registered nurse for 18 years, with experience in the fields of pediatrics, medical triage, and general internal medicine. Uyen graduated from the UW in 2000 with a BSN in Nursing and a BS in Zoology.
Since Jan 2016, Uyen has worked hard to expand her knowledge of gerontology, dementia and Alzheimer’s. The loving philosophy of Tiffin House is unparalleled. Uyen is humbled to be a part of this extraordinary Tiffin family. Our residents and their families have become like family to her as well.
Uyen lives in Round Rock with her husband, Chris, and their two children: Alanna (16) and Gabriel (13). They are active members of St. John Vianney Catholic Church, where Uyen is a part of a ministry that crochets caps for oncology patients of all ages. In her spare time, Uyen enjoys being a chauffeur for her kids, reading, cooking, and dancing to 80’s music. Uyen’s daughter, Alanna, plans to attend Texas A&M University after high school.
Uyen’s gift to ease the minds of those struggling with dementia and their loved ones is special beyond words. We feel privileged to have her heading our nursing team.
Hortencia Torres – Quality Assurance Manager Tiffin House Campus
Hortencia is a native Texas girl born in Eagle Pass Texas.
She graduated from High School in 1984 and moved to Georgetown in 1985. Hortencia has two wonderful children Anabelle and Ernesto and 3 Grandchildren.
Mrs. Torres has been a CNA since 1987 and was a supervisor for the Georgetown ISD for 12 years before retiring to take care of her mother.
In February 2011 Hortencia came to Tiffin House to visit a resident that had moved to Tiffin House from another facility where she was working and she fell in love with Tiffin House and never left. She is the Lead Assistant Manager and she is the campus leader of all Nursing Assistants. Hortencia ensures our staff maintains the highest level of professionalism and quality of care.

Shawn Eppel, BSN, RN – Nurse
A southern girl at heart, Shawn was born and raised in Baton Rouge, Louisiana where she worked as a paramedic for 8 years before graduating Cum Laude with her Bachelors of Nursing degree from Oregon Health and Science University. She has 10 years of nursing experience in areas including Infusion Therapy and Progressive Care nursing. Shawn joined the Tiffin team in May of 2019 and already feels at home working with the loving staff and fabulous residents!
Shawn lives in Georgetown with her husband, Konrad, and their two feisty boys: Luke (11) & Cody (9). She enjoys spending her time at home on the “mini farm” caring for their goats, chickens, and turkeys. Shawn also enjoys baking, crafting, party planning, binge watching Netflix, and watching Aggie football. Her son Luke is also a diehard Aggie fan!
Tasha Pool – Assistant Manager Tiffin House Campus
Tasha was born in Bryan-College Station. After graduating high school in 1991 she began working for Sanderson Farms as Assistant to the Manager. She stayed with Sanderson Farms for 11 years before taking positions as a Loss Prevention Manager at Sears for three years and as a Private Caregiver for 5 years.
In 2011 Tasha began working for Tiffin House as a Resident Aide. She was an exceptional worker and leader so in 2015 she was promoted to Assistant Manager. Her love for the residents and leadership of the Tiffin House staff are the embodiment of the Tiffin House mission.
Tasha is a mother of 3 children and a grandmother of 6 grandchildren. She is a Youth Advisory Board member of the Youth Department at the Endtime Evangelistic Pentecostal Church.
She loves her role in caring for those in need at Tiffin House and feels each resident is family. She believes in the Tiffin House philosophy and inspires all those that she leads.
Nereida Del Real – Team Leader
Nereida was born in Durango, Mexico and moved to Round Rock Texas with her dad when she was 9 years old. She graduated from Cedar Ridge High School in 2015.
Nereida started working at Tiffin House in 2016 as a Resident Care Aide and immediately fell in love with the residents. Tiffin House changed her life completely as she found her calling in caring for the extraordinary residents and working with the amazing staff.
Nereida likes to travel, be spontaneous and adventurous. Skydiving was one of the best experiences of her life. She has traveled around the U.S , Mexico & Canada.
She is currently pursuing her nursing degree.
Nancy Meyer – Activity Director
Nancy was born in Georgetown, and raised in Cedar Park Texas. She is a proud 5th generation Texan!
When Nancy’s parents began having health issues she became a full-time caregiver to both her mother and father. She understands the toll it can take on a family and how difficult decisions about your loved one’s healthcare can be on a family. She wishes Tiffin House would have been open when she needed help with her own parents’ care. Nancy joined the Tiffin House Team in 2010 as the Activities Director. She believed in the Tiffin House philosophy and desired to help others going through the same journey. She has flourished in this role, providing exceptional care to the Tiffin House residents.
Nancy’s passion for the residents is inspiring and ensures each of them receives nothing but the best care. You can always find her spending time with each of her Tiffin House residents offering an activity they would enjoy. You might also see her out with Tiffin House residents, taking in the beautiful sights and eats that Georgetown has to offer.
Dhelia Baker, BSN, RN – Nurse
Dhelia was born and raised in Jamaica before immigrating to the US to complete her Nursing degree and to find a better opportunity. She and her military family currently live in Killeen.
Dhelia earned her Associates in Nursing from Central Texas College, and completed her BSN from Texas Tech University. Over the years, she has worked as a CNA in both in-home and nursing home settings. She has always been passionate about nursing, especially in the geriatric field. Dhelia has been an RN in a nursing home setting for almost 2 years, and prior to that a pediatric nurse for almost 8 years.
She loves being a nurse, and always tries to put her best foot forward.
Sarah Molina – Office Assistant
Sarah was born in California. Moving around was something she became used to at a very young age. She lived in multiple cities in southern California, bordering areas of Arizona, jumped over to Texas in 2007, and moved away to Missouri and New York for a few years before returning to Texas in 2012. She found her passion for caregiving in 2014, shortly after her father was diagnosed with Esophageal Cancer. Not much later that her grandmother was diagnosed with Leukemia. Through the illnesses of both her father and grandmother, she also worked and cared for those with special needs and disabilities. It was through all of this, she found her calling as a caregiver.
Sarah started working for Tiffin House mid-2016 as a Resident Care Aide. Her love for residents grew stronger each and every day. Bringing our resident’s smiles, laughter, and happiness were her target each day. She married her best friend in November 2018. About a half a year later, she moved into the office setting and became one of the Tiffin House Office Assistants.
Michelle Garza – Team Leader
Michelle was born and raised in Georgetown, Texas. She has been a member of the Tiffin House family for over 9 years and believes whole heartedly in the Tiffin House philosophy.
Michelle loves her role at Tiffin House and feels Tiffin House represents a truly loving family approach to care. She takes great pride leading our staff that takes such pride and joy in caring for these wonderful residents.
Michelle is married and she has 3 wonderful boys.
Cindy Stearns – Office Assistant
Cindy was born and raised in Council Bluffs, Iowa. She spent most of her married life in the New England area where her husband, Jay, is from. Cindy worked in Architecture for 20 plus years, but stopped to be a stay-at-home mom to their only son, Garret. They moved to Texas 10 years ago for Jay’s job at Dell. As Garret entered high school, Cindy’s love for horses lead her to volunteer at Healing with Horses Ranch, a therapeutic riding center in Manor, TX. She worked with horses to help those with special needs, at risk youth, stroke patients and veterans. Horses are amazing animals that can help with physical and cognitive problems. When Garret went away to college (TCU ‘18), Cindy worked with special needs children in the RRISD.
After losing her mother to complications from dementia and her best friend from grade school being diagnosed with early on-set Alzheimer’s, Cindy was led to Tiffin House Assisting Living and Memory Care where she is now working as an Office Assistant.
Cindy loves to hike with her husband and dog, Bear, travel the world, attend TCU football and baseball games “Go Frogs” and visit their son, now living in Dallas.
