Justin Trodahl – Owner, President and Leader of the Assisted Living Management Team
Tiffin House Owner, Justin Trodahl, has helped guide Tiffin House to the Highest Rated Assisted Living in Georgetown, Texas. He worked as a Director of Rehabilitation in several Nursing homes across the State of Texas between 1997-2005 and felt in his heart the Alzheimer’s and dementia residents in these settings were under-served. He had over a decade of experience working with the elderly in his mother’s homes and used those ideas, coupled with his own unique experiences, to come up with the Quality of Life Program that Tiffin House uses to improve the residents’ lives. The Home setting of Tiffin House is like no other and this is evident from reading the testimonials of residents’ families. The Tiffin House difference is simply unmatched.
Justin encourages his staff members to allow residents to help with chores and it is common to see them helping fold clothes, sweeping the kitchen and doing dishes. Justin wants to add value to each resident’s life. Justin provides training for his staff on caring for Alzheimer’s and Dementia residents. He also provides the same training free of charge to families interested in learning more about the disease process. The classes are at Tiffin House once a month. Justin is a Combat Veteran of the Iraqi War (2006-2007), where he flew AH-64 Apache helicopters during the ‘Surge’ in support of US ground forces. He began his service to our country in 1992 and Honorably retired in 2016.
Justin received his Occupational Therapy degree from the US Army Health Science Center in 1994. He then graduated from Texas A&M University in 1999 with a Bachelors degree in Psychology with a heavy emphasis on Biology and Anatomy and Physiology. In 2003 Justin received his Masters in Business from the University of Oklahoma.
Hortencia Torres – Quality Assurance Manager Tiffin House Campus
Hortencia is a native Texas girl born in Eagle Pass Texas.
She graduated from High School in 1984 and moved to Georgetown in 1985. Hortencia has two wonderful children Anabelle and Ernesto and 3 Grandchildren.
Mrs. Torres has been a CNA since 1987 and was a supervisor for the Georgetown ISD for 12 years before retiring to take care of her mother.
In February 2011 Hortencia came to Tiffin House to visit a resident that had moved to Tiffin House from another facility where she was working and she fell in love with Tiffin House and never left. She is the Lead Assistant Manager and she is the campus leader of all Nursing Assistants. Hortencia ensures our staff maintains the highest level of professionalism and quality of care.

Kim Dahlgren, BSN, RN – Director of Nursing
Kim moved from the Seattle area to Texas in July 2019 to be close to family.
Kim has over 30 years in the healthcare industry, starting as a CNA and working her way up to management and receiving her RN 12 years ago. Kim earned her BSN from Seattle Pacific University in 2010. Her nursing experience is vast, covering family practice medicine, hospital general medicine, oncology, progressive care, and trauma. However, Kim’s real passion is the elderly. Kim was the director of nursing at a 65-bed assisted living/memory care in Redmond Washington. Kim is drawn to working with our senior population appreciating all of their history and experiences. Kim feels privileged to help them find happiness and comfort in this chapter of their lives. Kim has worked for a few senior living settings and feel like Tiffin House has the vision and implementation I would want for my family.
Kim lives in Georgetown with her husband and youngest daughter. She enjoys spending time with her oldest daughter and her family. Her favorite things to do in her free time is spending time with her 3-year-old grandson and 2-year-old granddaughter, caring for her dog, 2 cats, and 3 parrots, reading, listening to music, and traveling.
Kim is excited to be a part of the Tiffin family and we are honored to have her on the team.
Shawn Eppel, BSN, RN – Nurse
A southern girl at heart, Shawn was born and raised in Baton Rouge, Louisiana where she worked as a paramedic for 8 years before graduating Cum Laude with her Bachelors of Nursing degree from Oregon Health and Science University. She has 10 years of nursing experience in areas including Infusion Therapy and Progressive Care nursing. Shawn joined the Tiffin team in May of 2019 and already feels at home working with the loving staff and fabulous residents!
Shawn lives in Georgetown with her husband, Konrad, and their two feisty boys: Luke (11) & Cody (9). She enjoys spending her time at home on the “mini farm” caring for their goats, chickens, and turkeys. Shawn also enjoys baking, crafting, party planning, binge watching Netflix, and watching Aggie football on Saturdays!
Her son Luke is also a diehard Aggie fan!
Tasha Pool – Assistant Manager Tiffin House Campus
Tasha was born in Bryan-College Station. After graduating high school in 1991 she began working for Sanderson Farms as Assistant to the Manager. She stayed with Sanderson Farms for 11 years before taking positions as a Loss Prevention Manager at Sears for three years and as a Private Caregiver for 5 years.
In 2011 Tasha began working for Tiffin House as a Resident Aide. She was an exceptional worker and leader so in 2015 she was promoted to Assistant Manager. Her love for the residents and leadership of the Tiffin House staff are the embodiment of the Tiffin House mission.
Tasha is a mother of 3 children and a grandmother of 6 grandchildren. She is a Youth Advisory Board member of the Youth Department at the Endtime Evangelistic Pentecostal Church.
She loves her role in caring for those in need at Tiffin House and feels each resident is family. She believes in the Tiffin House philosophy and inspires all those that she leads.

Nereida Del Real – LVN – Nurse
Nereida was born in Durango Mexico. She moved to Texas when she was 9 years old with her family. At the age of 15 she started her first job at McDonalds where (to no surprise to Tiffin) she quickly was prompted to manager after only a few months. In 2015 she was introduced to Tiffin House by a friend, and she decided to make a change and join the Tiffin family. She started out as a Resident Care Aide and immediately felt the love in the Tiffin homes, and she especially loved the sweet Residents. Nereida decided this was the career path for her and she rapidly promoted to Team Leader due to her character and work ethic. After a few years as a Team Leader, she decided she wanted to further her knowledge in the field and began LVN nursing school. Nereida attended ACC’s Nursing program while still working and graduated in August 2021! She is now studying to receive her RN. An impressive young lady.
Yesica Calderon – Team Leader
Yesica Calderon was born in the Dominican Republic. In 1998, Yesica moved to New York to work as a Supervisor for Emirates Airlines at JFK Airport for four years.
Afterwards, Yesica moved to Massachusetts, and became a CNA. She worked with residents who suffered from ALS and MS. In Oct of 2016, Yesica started as a staff member at Tiffin House. She has worked hard and earned a position as one of our Team Leaders. Her dedication to our residents and excellent work ethic makes her a natural leader.
In her spare time, Yesica likes to read and watch interesting movies.
Sarah Fiechtner – LVN – Nurse
Sarah Fiechtner was born in the Central Valley of California, but don’t hold that against her because she’s lived all over the US since then and her favorite place to be is in the Lone Star State with her family.
Ever since she was a little girl, Sarah knew she wanted to be a nurse. She had a lot of practice caring for both people and animals as the oldest of eight kids who lived in the country with goats, chickens, turkeys, dogs, cats, and one really lazy horse. In 2013 she achieved her dream by graduating from the vocational nursing program at Gurnick Academy of Medical Arts and started working right away as a school nurse for the next six years.
When she moved to Texas to be closer to her family, Sarah found an amazing opportunity to work for Tiffin House and ever since she started in August, she already feels like part of the family. From her clinical time during nursing school working in many long-term care facilities, she knows what a special place Tiffin House is. Her goal at Tiffin House is to care for the residents the way she cared for her late grandmother Jackie – with love, dedication, and a commitment to a great quality of life.
Some of Sarah’s favorite activities include reading, hiking, drawing, hanging out with her rambunctious niece and three nephews, gardening, and cooking gourmet meals. She also loves watching basketball with her brothers and rooting for the underdog.
Nancy Meyer – Activity Director
Nancy was born in Georgetown, and raised in Cedar Park Texas. She is a proud 5th generation Texan!
When Nancy’s parents began having health issues she became a full-time caregiver to both her mother and father. She understands the toll it can take on a family and how difficult decisions about your loved one’s healthcare can be on a family. She wishes Tiffin House would have been open when she needed help with her own parents’ care. Nancy joined the Tiffin House Team in 2010 as the Activities Director. She believed in the Tiffin House philosophy and desired to help others going through the same journey. She has flourished in this role, providing exceptional care to the Tiffin House residents.
Nancy’s passion for the residents is inspiring and ensures each of them receives nothing but the best care. You can always find her spending time with each of her Tiffin House residents offering an activity they would enjoy. You might also see her out with Tiffin House residents, taking in the beautiful sights and eats that Georgetown has to offer.
Carol Swigert – Team Leader
Carol Swigert was born and raised in San Luis Obispo, CA. In August of 2019, she moved to Hutto with her husband Alan and youngest daughter, Rheagan. Their oldest daughter, Cheyenne, and her husband and grandchildren are also in Round Rock. Their middle daughter, Dalyce, is still in California, but they are working on making her a Texan! Carol is a grandmother to 2 beautiful granddaughters and 1 handsome grandson.
Carol has always been a caregiver as the oldest child in her family. Her future goals included becoming a Labor and Delivery nurse. However, she has come to love the residents & her work at Tiffin House, and finds that her heart is moving towards becoming a Geriatric nurse. Carol hopes to start her RN path this Fall. In her spare time, Carol enjoys softball, music, camping, all animals (especially her cats) and anything involving her grandchildren and family.
Sarah Saenz – Office Manager
Sarah was born in Harlingen, Texas. She graduated from The Harlingen High School in 2011. In 2018 she moved to Georgetown Texas after she met her husband, Ernesto.
Sarah knew from an early age that she wanted to help people, due to her father having diabetes and her mom being diagnosed with cervical cancer (she is currently in remission). If she wasn’t helping people directly, she was busy helping families make choices about their loved ones. In August, Sarah started working for Tiffin House. She strongly believes in Tiffin’s mission and truly loves our residents like they’re her own grandparents.
In her spare time Sarah spends time with her children and likes to do anything family oriented.
Sylvia Molina -Madame Chef
Sylvia Molina was born in Memphis, Texas. She moved to Cameron, Texas in 1968, and attended school in the Yomen School District. Her Yomen spirit is strong! Syliva was a manager for 35 years at the Royal City Company that produces office chairs. In 1994, she opened up her own business, Molina’s Restaurant. In 2014, Syliva started working at Tiffin House. Her excellent cooking skills earned her the name, “Madame Chef” from one of our dear residents. Sylvia has one daughter, three grandchildren and three great-grandkids. She loves to travel and attend her great-grandkids’ activities.
